Directions
Start by cleaning all of your vegetables and setting it in a platter. Peel and de-vein your shrimp along with all of your meats on a platter.
This dish is not your everyday type of dish, its mostly eaten with your whole family or friends. You gather around the table and your Hot Pot is right in the middle for everyone to reach. The vegetables and meats are around it to add into your hot pot.
For the shrimp, you’ll want to let it sit in the broth to cook and same for the vegetables if you like it really cooked. Make sure you have your setting on High so that the hot pot boils and cooks everything.
You can eat this with Banh Hoi noodles or rice. In a pot of water on medium high heat, bring to a light boil and add in your noodles. Stir the noodles around to make sure it all gets cooked. It’ll take about 5 minutes or so for the noodles to cook. Once the noodles are to your liking- drain and set it on the table with the meats and vegetables.
In another pot on medium-high heat, add your coconut milk and stir. Bring to a light boil. Add in the entire jar of the BBQ sauce, the entire bottle of the soya bean curd, and the whole can of coconut soda. Stir to combine and bring back to a light boil. Make sure you get every little bit of BBQ sauce in the pot and water also helps thin out the soup.
Season the soup with salt, sugar, fish sauce and chicken granulated soup base. I start off with 1 tsp of salt, and fish sauce, ¼ cup of sugar and 2 tbsp of granulated soup base. I usually taste it to my liking. I like my hot pot to be sweet, flavorful and spicy.
once everything has been added, you can add your beaten egg (optional) to the broth and make sure its on high, for about 2 mins. After this, you can add your broth to you Hot Pot skillet and put all your ingredients you want in there. Please keep in mind you do not put all of it in there. you can add a variety of this and that to keep it all balanced out. Make sure everything is cooked to your preference and enjoy!
PS: Top it off with Spicy Thai pepper Fish sauce.
